Microwave Power
From October 2008 newsletterMartin George of our Food Manufacturing Technologies Department delivered the keynote presentation at the International Microwave Power Institute's 42nd Annual Symposium in New Orleans, addressing 'Factors Affecting Microwave Power and the Uniformity of Heating'.
Ensuring products achieve an adequate time-temperature regime without causing degradation by overheating is a major factor in the delivery of safe, high quality microwave heated food. This requires a structured approach and a real understanding of the performance of microwave ovens and the way in which food heats within them. Our microwave group advises extensively on issues such as correct microwave food product and packaging design and the development of microwave heating instructions.
