The threats posed by foodborne micro-organisms - whether to safety or food quality - are ever-present. The Hot Topics in Food Microbiology series of conferences is designed to keep industry personnel appraised of the major developments in the field and so help with the assurance of food safety and quality. The October 2004 event took the opportunity to:
- review developments with several key pathogens, including foodborne viruses, protozoans and the significance of Legionella to the food industry
- take stock of issues and developments with fresh produce microbiology and fresh produce decontamination
- discuss the importance of microbiological method validation and describe the major schemes in operation in the UK, Europe and internationally
- assess developments and progress with microbiological risk assessment and its potential contributions to food safety assurance
