Assess the science behind the claims for performance functional foods

With functional foods developing a growing market share, more attention is being paid to those attracting most consumer interest. In covering performance functional foods, this book looks in detail at those functional foods which affect mood and mental and physical performance. One of the key issues for these products is the research into the complex links between nutrition, functional ingredients such as herbs, mood and cognitive performance. With an international team of contributors, led by David Watson of the UK's Food Standards Agency, this book reviews key research in this area. Aimed at anyone with an interest in the science behind functional foods, it provides a useful overview of the subject and a valuable pointer to sources of further information.

After an introductory review of market trends, chapter 2 looks at the recent research on the interactions between stress, food and mood, discussing in particular the role of carbohydrate. The following chapter reviews current evidence for the impact of various nutrients and herbal ingredients on mood and cognitive performance, including herbs such as St. John's wort and kava kava. Chapter 4 then discusses the range of medicinal plants which have been associated with improvements in mental and physical performance. Subsequent chapters look in more detail at particular topics including phyto-oestrogens and cognitive function, the functions of ginseng, Ginkgo biloba and Alzheimer's disease, polyphenols, and the impact of caffeine on mental performance and mood.
