Effective washing and decontamination of ready-to-eat fruits and vegetables - including fresh leafy herbs - is difficult. There is increasing concern regarding the microbiological safety of such products and the effectiveness of current methods. In order to help address these problems, CCFRA conducted a wide-ranging survey of current industry fruit and vegetable washing practices. The findings of this survey are presented in this review, together with background information on potential problems, and supplementary notes and observations arising from scientific and technical literature.
