Understand how the time-intensity approach to sensory evaluation can be adopted to assess sensory perception of a product over time.

In traditional sensory analysis, the sensory profile test uses a single value of intensity to compare products according to a list of attributes. However, as a 'snapshot' approach this takes no account of changes in sensory perception over time - including, for example, rate of onset, rate of decay or persistence. This review explains and discusses the time-intensity approach through which these aspects of sensory evaluation can be addressed.

It reviews current knowledge of the time-intensity method and the statistical approaches to time-intensity data analysis, and follows this with a description of a specific exercise to assess panel performance and product characterisation using the approach. The review is relevant to sensory scientists and product developers throughout the food and drinks industry.
