A library of over 1000 articles on food safety - with the emphasis on microbiological safety to help food companies minimise the microbiological hazards in products by getting their safety assurance right first time.

The library of articles on food safety can be browsed generally or used to find specific safety information on particular microbiological issues and food processing technologies. To browse the library contents and index, and gauge the range of issues covered, click here. Note that the articles themselves cannot be accessed in this version.

The articles are organised in the following themes but also extensively cross-linked to each other:

  • Microbiological food poisoning
  • Food preservation principles
  • Chemical and physical food safety issues

Scope and intended users

The Library is being used by food companies, enforcement officers and food technology lecturers to:

  • Support development and evaluation of HACCP studies
  • Help assess food safety assurance systems
