Food security has attracted much attention over the last few years. Whilst safety assurance has long been high on the agenda of food companies and is consequently being addressed through established systems, the threats posed by malicious contamination require different measures. Understanding these threats, how they should be viewed and what precautions can be taken to circumvent potential problems was the subject of a one-day seminar held at CCFRA in November 2003.

These notes contain abstracts and copies of the visual aids used at this event, providing an overview of the topics covered by each of the speakers - all experts on an aspect of food safety and including representatives from WHO, the drinking water inspectorate, research organisations and the police.
