Understand how to prevent post-process microbial contamination of canned products.

This manual is based on the findings of an extensive research programme at CCFRA on the post-process sanitation of mechanical can handling systems which, although conducted in close co-operation with the canning industry some years ago, is still of relevance today. Prevention of processed cans from coming into contact with external microbial contamination while still wet is examined. Relevant factors discussed include good seaming control, objectives and organisation of post-process sanitation programmes, bacteriological standards for post-process sanitation measures, cooling water disinfection, and good hygiene practices in relation to personnel and can handling equipment. It has proven to be of benefit to both management and technical staff.
