This guideline document has been produced so that reasonable, fair and consistent standards of factory production and cannery inspection are achieved. It provides information on procedures for the inspection of canneries, as well as ensuring that both the canner and the inspector are aware of those aspects for which it would be reasonable to expect evidence of good manufacturing practice and satisfactory quality control. It covers procedures for management, the factory environment, raw and packaging materials, filling operations, can closure and control, sterilisation operations and finished product storage and distribution.
