Modified atmosphere packaging (MAP) is an increasingly popular food preservation technique whereby the composition of the atmosphere surrounding the food is different from the normal composition of air. This guideline provides information covering all stages of the MAP process essential to successful MAP. Specific information and advice is provided for products such as red meats and offal, fish and other seafood products, poultry products, cooked, cured and processed meat products, cook-chill food, non-dairy bakery products, dairy products, pasta and eggs, combination products, dried foods, and fruit and vegetables.

Recommendations cover topics such as hygiene, temperature control from manufacture through to retail, quality assurance tests, raw materials and ingredients, processing, MAP materials, shelf-life evaluation and labelling
