This document deals with the application of Temperature and Time-Temperature Indicator (TI and TTI) technology to food products and the food industry. It outlines the issues of concern surrounding this technology. The guidelines cover a wide spectrum of needs, as identified by industry through the CCFRA based TTI Working Party which represented UK chilled and frozen food manufacturers, the retail, distribution and packaging sectors, MAFF and CCFRA. Guidance is provided on how to test and apply indicators and how to interpret data to ensure accurate results.
