Microbiological risk assessment Industrial microbiological risk assessment (IMRA) is designed to give food manufacturers a measure of how safe their products are with respect to specific pathogens. It is a rapidly developing science on an international stage. We have been actively working with industry and Government in developing this technique. This culminated in the publication of a new edition of Industrial microbiological risk assessment: a practical guide (CCFRA Guideline 28) in 2007. In addition to generic guidance and a step-by-step guide on how to conduct an IMRA, the guide included a substantial appendix of case studies in which IMRA had been applied to Salmonella in dried powders, Clostridium botulinum in sliced chicken roll, and Listeria monocytogenes in layered salad and coleslaw products.
