HACCP principles and audit techniques

This course is focused on how to perform a detailed audit of the HACCP systems of food and feed operations. It is designed to give participants a thorough understanding of the general approach to HACCP auditing and the techniques needed to perform an effective audit.

This course is aimed at participants with a good existing knowledge of the HACCP principles.

All workshops will be of 5 days duration and will include tutor presentations, group excercises and a visit to a food / feed operation. Key topics covered in the workshop will include:

  • Relevant EU legislation
  • HACCP based procedures
    – Prerequisite food hygiene requirements
    – DG SANCO Guidance Annex 1
    – DG SANCO Guidance Annex 2
  • HACCP Principle 6
  • The Principles of auditing
  • Practical training audit (field) visit
  • Document review

By attending this course participants can refresh and challenge their knowledge of HACCP and gain a good understanding of how to approach an audit of a HACCP based system. This course is designed for participants with a more advanced existing knowledge of HACCP.

Activities planned:

  • The first day is introductory. Registration will be from 09:00. The training programme starts at 09:15 am
  • Days 2, 3 and 4 will start at 0900 and end no later than 17:30
  • There will be a field visit on Day 4
  • Day 5 will start at 0900 and end at 1400
  • Questionnaires will be used to test delegate understanding

The courses are aimed at:

All workshops are open to public authority staff of all 27 EU-Member States and EU candidate countries who are responsible for controls of food and feed businesses. Additionally places will be available for participants from selected third countries, in particular developing countries.

There will be approximately 23 participants per workshop. The programme provides training for up to 760 participants, over the 2 year programme

The courses are primarily aimed at public authority staff with a practical involvement in the inspection of food and feed business operations.

The Training Provider:

The training will be provided by Campden BRI on behalf of the EU Commission. Campden BRI has an international reputation as a centre of HACCP excellence and has considerable expertise in running training courses of this type for industry and government.

Workshop materials and presentations will be in English and/or French and/or German. Participants must have a good understanding of the relevant workshop language, both written and spoken.

COURSE DATES

The Cost:

For EU member states, Candidates Countries and the majority of invited third countries there will be no charge for attending the workshops, this will include:

  • Hotel accommodation
  • Economy flights / train travel
  • Organised meals (breakfast, buffet lunch and dinner)
  • Transfer to/from arrival airport / train station to the hotel/training venue
  • Course materials
  • Field visit and transfer

It does not include:

  • Hotel extras (e.g. room service, telephone, mini-bar, newspaper, drinks other than those provided, pay to view television, laundry)
  • Meals other than those organised
  • Transfer from / to airport / train station of departure

How do I participate?

All applications must be channelled through the designated contact in the EU Member State, Candidate Country and invited third countries.

Your application will be subject to approval by the Executive Agency for Health & Consumers. Non-attendance or cancellations will be reported to the Directorate.
