Training courses on HACCP: Overview

Auditing

The European Commission, through EAHC, considers a uniform approach vital to enhance understanding of auditing and control techniques for the verification of compliance with food and feed hygiene requirements and HACCP. It is therefore important that suitable courses are made available at Community level.

In order to help the EU's trading partners to familiarise themselves with Community import requirements and to enhance international trade of safe food and feed, the courses will also be open to participants from selected third countries and particularly developing countries.

Two different courses have been developed. The first focuses on the development, implementation and maintenance of control procedures based on HACCP principles. The second course focuses on the techniques needed to conduct a detailed audit to verify implementation of HACCP systems used by food and feed business operators. This course is aimed at participants with a good existing knowledge of HACCP based systems. Workshops for each course will be run over 5 days. It is not intended that participants attend both courses.

Similar training programmes have been run in 2006, 2007, 2008 and 2009.
