Food allergen testing
Testing for food allergens is important in checking the efficacy of allergen management controls. For example, it is often used to confirm the allergen status of ingredients. It is also used in the validation and on-going verification of cleaning regimes. Testing is used to demonstrate that allergen control measures are effective, and to corroborate written assurances and paper traceability.
Typical samples analysed for allergen include raw materials and ingredients, swabs taken from surfaces, rinse and wash waters, and food and drink final product.
