Factory audits and benchmarking


 

Staff within the Food Hygiene Department are familiar with the food processing environment as much of the Department's research and work is factory based. This allows staff to advise on best hygienic practices and to be able to compare and contrast operations in terms of benchmarking such practices. Following recent cross-contamination research, the Department is also able to help food manufacturers understand where the greatest risks of product contamination are likely to occur and thus determine best hazard control practices. With the help of colleagues in other Departments as necessary, the Department can also help trace and control factory based microbial contamination problems, particularly related to the re-contamination of ready-to-eat products.
