Predictive microbiology
Carrying out a range of trials to determine the shelf-life of a product can be very time-consuming - especially when developing new products, when a range of alternative scenarios might be under consideration.
The growth of a range of microorganisms can be predicted using computer models, perhaps allowing a more targeted approach to challenge testing or other shelf-life testing. Parameters such as lag time, and time to reach a specific level can be predicted. As well as comparing different virtual versions of new products, predictions can also be used in troubleshooting, where a production problem such as increased storage temperature has occurred.
