"There is increasing pressure on food manufacturers from both government and consumers for food products with reduced levels of sugar, fat or salt. Many food manufacturers look to their product development teams to create innovative, new and healthy eating products, which still have the appearance, texture and flavour that the consumers demand. An understanding of the issues and tools available to develop these products is crucial."
