For those working in the brewing industry in a HACCP environment, understanding the fundamentals of this quality system is essential. This one day course provides training in the fundamentals of HACCP, and leads to the Foundation Certificate in HACCP.


Course content

The course contains some classroom content but is mainly hands on and includes preparing a HACCP plan. Topics include:

  • Introduction to HACCP, legal requirements and the benefits of HACCP
  • HACCP principles and terminology
  • Practical applications of HACCP principles
  • Constructing a flow diagram
  • Identifying hazards and implementing control measures
  • Identifying critical control points
  • Monitoring systems and corrective actions
  • Preparing a documented HACCP plan.

Attendees may choose to sit a multiple choice examination to gain the Foundation Certificate in HACCP, which is registered with the Royal Society for Public Health.

This course is conducted at breweries on request.
