Benefits of attending
Prerequisites are the foundation on which HACCP plans are developed. For some categories of food however, particularly ready-to-eat products, their significance is raised as they are the major control of cross-contamination after their final decontamination treatments. This course helps delegates identify the hazards of importance to their food products and their associated sources and vectors of cross contamination. The control of these sources and vectors is then linked to the prerequisites that need to be implemented in the factory. The course also develops a risk ranking approach to determine the significance of these sources and routes of contamination to determine which controls can be described as Operational Prerequisites. The course concludes with the determination of the validation of such controls together with setting of control values and their associated monitoring, verification and records. The overall aim of the course is thus to develop a prerequisite or environmental management plan which will maximise the control of cross-contamination hazards.
Delegates have the option to sit an exam on the final day to obtain certification by the RSPH
