Allergen management in food companies is a critical area requiring pro-active management. A high proportion of adults believe they have an allergy, and children are perceived to have a greater incidence of allergy. Legislation requires that the presence of certain food allergens are declared on the pack when present in a product. In addition to the deliberate use, there are occasions when a product can be cross-contaminated due to the manufacturing environment.

This module covers all aspects of the production process from the sourcing of raw materials, through production, assessment of the risks of cross contamination and the storage and testing of final products.

Day 1

The first day covers the consumer perspective and an overview of Sainsbury's Policy on the Control of Allergen Cross Contamination. It concludes with an interactive session about verification, validation and testing.

Day 2

The second day is a very interactive, practically based, day focussing on both:

  • evaluation of a production environment for allergen management and
  • evaluation of validation information for demonstrating the effectiveness of allergen management

It will end with an overview of Sainsbury's approach to their customer offer with regards our customers with allergies and intolerances.


Benefits of attending

This module aims to improve delegates' awareness of the issues surrounding control and management of allergens within the production environment. It also seeks to provide insight and guidance on how to assess the risks of cross contamination of a food product with an allergenic food or ingredient.

Who should attend?

The Academy is designed for individuals in Technical Management roles in manufacturing companies supplying Sainsbury's own brand products.

TMA workshops are for the Sainsbury's aligned personnel only and on no account should personnel dedicated to other retailers' accounts attend the training.

By attending this module of the TMA you are eligible to attend Sainsbury's free* Annual Conference at Campden BRI, Chipping Campden, Glos, UK - Food only, Thursday 28th June 2012 where you will receive a Sainsbury's update, discuss hot topics with invited guest speakers and an opportunity to foster a wider network. (*Accommodation not included)
